Fried Rice


INGREDIENTS:

3-4 cups cooked rice
1/2 onion, chopped
4-6 ounces of meat of choice, cut into bite size pieces
2 tablespoons soy sauce
12 ounce bag coleslaw mix
8 ounces of frozen peas & carrots mix
2 eggs
1-2 teaspoons oil

DIRECTIONS:

Heat oil over medium heat in skillet large enough to hold all ingredients. Cook onion and meat in oil until almost fully cooked.
Add in soy sauce (can add more if needed) and cook 1-2 minutes, covered.
Add in coleslaw mix, stir, and cook an additional 1-2 minutes, covered.
Add in frozen peas & carrots, stir, and cook 1-2 minutes, covered.
Add in 1 cup of cooked rice, stir, and cook 1-2 minutes, covered. Repeat with remaining rice in increments of 1 cup of rice.
When all the rice is added, crack eggs and pour directly into pan. Use spoon or spatula to break up egg and scramble in the rice mixture.
When egg is no longer runny, remove from heat and stir.

SERVES: 4-6 people

PREP & COOK: under 30minutes 

TIPS & TRICKS:

*For the meat, I usually use 1/2 a chicken breast or a pork chop.
*For the coleslaw mix, I use Mann's Rainbow Salad.
*Don't salt & pepper the rice until time to serve since the soy sauce is so salty.
