Power Pancakes

INGREDIENTS:

4 eggs
1 cup oats
3/4 cup cottage cheese


DIRECTIONS:

Mix ingredients and cook on greased skillet over medium heat as usual.

SERVES: 2-3 people, about 10 (4-inch) pancakes

Tips & tricks:

*Smaller pancakes are easier to flip
*Best eaten the same day, but can be refrigerated for 2-3 days
*Top with syrup for a sweet & savory breakfast
