Cream of Mushroom Soup

INGREDIENTS:

2 tablespoon butter
1/4 cup onion (minced)
1/2 cup mushrooms (minced)
2 1/2 tablespoon flour
1/2 cup water (or broth)
1/2 cup milk
salt & pepper (to taste)

DIRECTIONS:

Melt butter in skillet. Saute onions in butter until soft (3-5 minutes).
Add in mushrooms, stir & cook 2-3 minutes.
Sprinkle in flour & cook for 1-2 minutes. Whisk in milk & water until smooth.
Bring to a simmer & cook until thick, about 5-8 minutes.

**Can be stored in fridge 3-4 days or frozen immediately

Makes: 1 "can" of soup

PREP & COOK: under 30 minutes
